Whenever we cook potatoes, we alway double the recipe, so we can indulge in a special treat of potato latkes-like the following day. This is the perfect dish to serve as a starter with creme fraiche or a spicy chutney or to serve as an accompaniment to a simple roast.
1 Cup of leftover mashed potatoes
1/2 Cup of breadcrumbs – You can also use Panko
3 Scallions thinly sliced, including the green part
2 Eggs slightly beaten
Salt & Pepper and a dash of Hot Paprika
You can use parsley, coriander or chives finely chopped
Simply place all ingredients in a bowl and mix well. Let the mixture sit in the fridge for an hour or so. It will be easier to manipulate when cold.
Take the equivalent of 2 tablespoons of the mixture in the plam of your hands and create small patties you can fry in a hot pan with Vegetable oil.
