Swahili Rice with braised Short Ribs

What a fabulous dish ! If you have a pressure cooker or instant pot, here is a reason to use it. The dish takes a few minutes to put together and cooks in about 45 minutes. Not often do see Swahili Pilau recipes, similar to some northern Indian dishes, but this one is so easy to make and so tasty. In this version, I used short ribs, but you can use any braising meats with a bone. I highly recommend it.

INGREDIENTS
Serves 4 people

500 Gr. beef short ribs
2 Cups Basmati rice (washed and soaked)
3 Medium size potatoes, peeled and quartered
1 Large Onion diced
1 Tablespoon Ginger grated
1 Tablespoon Garlic grated (3-4 cloves)
2 Teaspoon Cumin Seeds
4-5 Cloves
4 Cardamom pods bruised
1 Teaspoon Ground black pepper
2 Small Cinnamon Sticks
Ground Spice mix (same as above, ground)
Salt to taste
Water (enough to cover the meat)

PREPARATION
Grate the ginger and garlic and set aside
Cut the onions in small dices and set aside
Prepare the spices and set aside in two small bowls. One for the ground spices and one for the whole spices.
Wash the basmati rice in cold water, until the water runs clear and leave the rice to soak for about 30 minutes.
While the rice is soaking, add two tablespoons of olive oil in your pressure cooker and saute the short ribs until brown on all sides. Once brown on all side, remove them from the pot and set aside.
In the same pot, saute the onions and garlic/ginger paste until slightly browned on all sides.
Put the whole spices and saute for a few minutes. Add the ground spices and saute for a minute.
Add the short ribs back in the pot and cover the meat with water, just to cover the meat.
Cook on medium-high level for about 30 minutes. Then add the rice and potatoes and mix well.
Cook the mixture for about 8 minutes. Release the pressure and let the rice rest for about 10 minutes so it may absorb all the cooking liquid.
Garnish with fresh coriander and serve.
