Cheese Soufflé Quiche

When you think nothing can be better than an airy, rich and sumptuous soufflé, simply add a hint of garlic, sauteed onions and a good amount of gruyère cheese. Pour the mixture over a homemade pie dough and you have an elegant lunch dish which, when served with a crisp and chilled white wine, ranks amongst the best dishes in our home. Of course, you can use a store bought pie dough and you have dinner ready in 45 minutes, with only a few minutes of preparation. The beauty of this dish, is it makes for wonderful leftovers and can be served for another light lunch.

Cooking Time : 35 minutes

INGREDIENTS

For 4 people
1 Pie dough (homemade or store bought).

4 eggs
200 Gr. Grated Cheese (Gruyère, Emmental, Cheddar)
250 ml Milk
50 Gr. All purpose flour
1 Onion finely minced
2 Garlic cloves finely minced
Chopped parsley (2-3 Tablespoons finely chopped)
Butter
Salt & Pepper

PREPARATION

Roll the dough thinly and cover the base of a tart mold (recipe below)
Preheat the oven to 180°C.
Saute the onion and garlic with a little butter until translucent and and slightly golden brown.
In a big salad bowl, whip the eggs with the milk.
Add the sifted flour and mix vigorously to achieve a smooth, lump-free preparation. Then add the grated cheese, onion, garlic, and chopped parsley. Salt and pepper to your liking, then mix until you get a very light and homogenous mixture.

Bake for 30-35 minutes, until the quiche is well puffed, golden brown and slightly fluffy. Let sit for a few minutes before serving.
Serve with a green salad and crisp glass of white wine. Delicious !
