Rillettes de Saumon

Here is a great canapé spread you can serve before dinner on a toast, a piece of baguette or craquelins. It is very easy to prepare and can be done in a few minutes.

INGREDIENTS
1 fresh Salmon fillet
1 Cup of Chicken / Vegetable broth
2-3 Slices of Smoked Salmon finely sliced
2 Tablespoons Capers lightly chopped
Zest of Lemon
Juice of 1/2 lemon
80 Gr. Creme fraiche (you can also use 1/2 Cup of good mayonnaise)
Sprigs of Chives
Sprigs of fresh Dill
Few drops of Tabasco
Salt & Pepper to taste

PREPARATION
Cook the salmon in a chicken/vegetable broth. Bring the broth to a soft boil and add the salmon fillet and cook for about 4 minutes. Remove from the broth and let it cool, until you can separate the grains.

In a small bowl, pour the crème fraîche or mayonnaise and the chopped capers, along with the chives, dill, tabasco, lemon zest and lemon juice and mix well.
Add the cooled down salmon broken in small pieces, the sliced smoked salmon and mix well.
Salt and pepper to taste and place in the fridge for an hour or so.
Bring the rillettes at room temperature and spread on a piece of baguette, crouton, cracker etc..
It is a great accompaniment to any cocktail, with a crisp glass of wine.
