Mediterranean Hopscotch Chicken en Crapaudine

INGREDIENTS

Small Farm Raised Chicken (1.5 – 2 Kg) Cut open in half

2 garlic clove finely chopped
2 tb spoon capers finely chopped
5-6 sundried tomates pieces finely chopped
Zest of 1 lemon
4 anchovies finely chopped
6 slices of Jalapeno (cured in vinegar) finely chopped
1/4 cup of butter at room temperature

METHOD

In a small bowl combine all ingredients with the butter and mix until you reach a creamy texture.
Insert butter between the skin and the meat and spread all over the chicken.
Bake the chicken at 450 degrees F (210 Celsius) with fan on and cook the chicken for 25 minutes – flip over and continue cooking for another 10-15 minutes. (At this stage, you may add sliced potatoes which will cook in the butter juice)
IMPORTANT : Let the chicken rest for approximately 10-15 minutes, covered with aluminum foil.
