
INGREDIENTS
1/4 Red Cabbage & 1/4 Green Cabbage finely sliced
1 Small Red Onion Finely Sliced
1 Small Cucumber – Deseeded and thinly sliced
1/2 Cup of Crispy fried Shallots / Onions (Store bought)
1/4 Cup of Mayonnaise
1 Teaspoon Dijon-style mustard
1/4 Teaspoon Sugar
1 Teaspoon Sriracha Sauce
Salt & Pepper to taste
Finely sliced scallions & Fresh Coriander finely chopped
METHOD
Finely slice all vegetables ( I use a Mandoline) and place in a large bowl.
In another small bowl, mix the mayonnaise, french mustard, Sriracha Sauce, Sugar, Salt & Pepper. The vinaigrette should be quite liquid.
Pour the vinaigrette over the vegetables and mix well.
Pour the fried shallots – Garnish with Scallions & Coriander.
Serve immediately.
TIP DU JOUR :
Include the fried shallots at the last minute, otherwise they will become soggy. The fried shallots add a nice crispy texture to the salad and a wonderful flavor.
You can prepare everything in advance – Only recommendation is not to pour the vinaigrette in advance, nor the fried onions. The mixture becomes wet and soggy.
