
INGREDIENTS
2 Large Pita Pockets breads
2 Tablespoon olive oil
1 Garlic clove, crushed and minced
1 Green Cucumber thinly sliced
4 Medium Tomatoes, sliced
2 Scallions sliced finely
1/2 Red onion finely sliced
2 Tablespoons fresh chopped parsley
1 Tablespoon fresh chopped mint
DRESSING
1/3 Cup Lemon Juice
1/4 Cup Olive Oil
1 Clove Garlic finely chopped
1 Teaspoon Sweet Paprika
1/2 Teaspoon Cumin
1/2 Teaspoon Freshly ground Pepper
PREPARATION
Brush each side of the bread with combined oil and garlic, place the bread on an oven tray – Toast in moderately hot oven for 15 minutes, until crisp.
Break into pieces.
In a large serving bowl, combine cucumbers, tomatoes, shallots and herbs.
Just before service combine all the dressing ingredients in a bowl and mix thoroughly and pour over the salad – Finish with a garnish of the Pita Bread.
