2 1/4 Teaspoon Instant Yeast
3/4 cup Water
1 Cup Milk
1 1/4 Teaspoon Salt
1/4 Teaspoon fresh ground pepper
1 Tablespoon Sugar
3 1/2 Cups unbleached all purpose flour
1 Cup finely grated Cheddar Cheese
1/2 Cup finely grated Parmesan
2 Tablespoon Butter
2 Teaspoons Tomato paste
Combine all ingredients and knead with a mixer with a dough hook until you’ve made a soft, smooth dough. The dough should be very soft but not sticky.t
Cover and let it rise for 1 hour – until it has almost doubled in size.
Transfer the dough to a lightly greased work surface and pat it into a 21 cm log.
Transfer the log to a lightly greased loaf pan. Cover the pan and let is rest for 45 minutes.
Bake in a pre-heated oven at 170 Celsius for 20-30 minutes. If the crust becomes too dark, cover it slightly with aluminum.
Bake for an additional 10 minutes.
Place it on a rack and let it cool completely –
Sliced and toasted in the morning… I don’t know of anything better… I don’t understand why restaurants ever serve something like that ! Really !
TIP – Put 1/2 teaspoon of Chilli flakes in the dough preparation – A nice kick !
Instead of cling film, I use shower caps, I steal from my wife ! … I reuse them !
