Udon Noodles with Spicy Minced Meat

Easy, spicy and so tasty. A perfect weeknight dinner which will please everyone at the table. You can substitute the noodles for Jasmine Rice.
By the time you saute all your vegetables and ground meat, your rice should be ready. Dinner in 20 minutes.

INGREDIENTS
1 Garlic clove – Grated
1 Small piece of Ginger (same size as garlic roughly) Grated
1 Small Red Onion – finely sliced
2 Celery branches thinly sliced diagonally
1 Carrot peeled and grated Julienne style
1 Green Scallion finely chopped
250 gr. Ground Beef or Pork
Sauce :
1/4 Cup of Soya Sauce
2 Tablespoon Sesame Oil
1 Large Tablespoon of Gochujang paste
1 Teaspoon Sesame Seeds
2 Tablespoon Canola Oil / Sunflower Oil

NOODLES
1 Small packet of Udon Noodles – Available in Asian Grocery shops.
Boil water in a medium size pan and cook the noodles for about 3 minutes. Just about when the meat is cooked through.
Drain and pour with the meat/vegetable mixture –

PREPARATION
In a small bowl – pour the Gochujang paste with the soya sauce, sesame oil and sesame seeds and mix well.
Prepare all your vegetables and cut them in advance.
Heat a wok until it starts smoking, then pour the oil. When the oil is also starting to smoke, pour in the garlic and ginger and saute for a minute or so. Add the onions, celery and carrots and saute all the vegetables for 2-3 minutes, until they become translucent.
Add the ground meat; beef, pork or chicken can work with this recipe. Saute the meat until cooked through.
When all the ingredients are cooked through, yet still crunchy, add the noodles and the sauce and mix well.
Add a scallion finely chopped and coriander leaves. Serve immediately.
