1 1/2 Cup Milk (355 ml)
4 Tablespoons White VInegar
2 Cups All purpose flour (240 Gr.)
4 Tablespoons Sugar
2 Teaspoons Baking Powder
1 Teaspoon Baking Soda
1 Teaspoon Salt
2 Eggs
4 Tablespoons melted butter (57 Gr.)
1 Cup Fresh blueberries
Method
if you have a blender… great… if you have a Nutribullet even better ! Or, if you prefer the traditional method, in a bowl, stir in all the liquids ; milk, eggs, vinegar and melted butter and mix well.
In a separate bowl, stir in the flour, baking powder, baking soda, sugar and salt and using a whisk, mix well. Using your whisk, pour the liquid mixture in the flour preparation and mix constantly to avoid any lumps.
In contact with the vinegar, the baking soda will activate. It will create bubbles and make the dough very light and airy. This is where the secret lies.
Melt a little butter in a non-stick pan and using a ladle, pour some of the dough mixture in the pan. Keep the pan at medium heat so it does not burn the surface of your pancakes. Cook for 2-3 minutes add a few blueberries and flip over. Cook for a further two minutes.
Serve with Maple Syrup…. Canadian of course…
