Salmon Mousse

An easy recipe ready in minutes. Prepare the night before and serve cold with a few slices of baguette. Elegant, yet, so simple.

INGREDIENTS
400 gr Smoked Salmon cut in large pieces
Juice & Zest of a Lemon
1 Small French shallot finely chopped
1 Celery branch, finely chopped
1 Large tablespoon of Mayonnaise
1 Large tablespoon of Creme Fraiche or Sour Cream
Salt & Pepper
Fresh Parsley or Dill for garnish

METHOD
Grate a fresh lemon over a medium size bowl. Pour in the shallot, celery, mayonnaise, cream, salt, pepper and chopped parsley.
In a bowl of a food processor, put the salmon with the lemon juice and chop the salmon roughly. Do not overmix and make a mousse. You want to keep some of the texture.
Pour the mixture (except a few teaspoons for garnish) in the bowl and mix throughly.
Pour in individual bowls and garnish with parsley and few pieces of chopped smoked salmon.
