Welsh Rarebit – Fortnum & Mason


Basically a Grilled Cheese for Adults ! Complex flavours compete with one another, creating a wonderful and rich lunch, snack or cut in pieces, a beautiful cocktail teaser !
Mix all the ingredients, whilst you grill the bread. Ready in minutes.

INGREDIENTS
4 Slices of Sourdough slices bread – I often use Brioche Bread for a rich and decadent lunch.
4 Tablespoon Guiness Beer – Dark beer is preferable, put you can use a Pilsner-type beer, which works just as well.
2 Tablespoon of Worcestershire Sauce
A few drops of Tabasco – I use Sriracha Sauce about 1/2 teaspoon
150 Gr. Aged Cheddar Cheese
1 Large beaten egg

METHOD
Preheat your oven and toast your bread on both sides – You can actually use a toaster. Preheat your oven with the grill on at 180 Celsius.
In a large bowl, beat together, the beer, the egg, pepper, tabasco, Worcestershire Sauce and cheese, mix well.
Simply pour about 2 tablespoons of the cheese mixture over each grill for about 3 minutes.
Serve with a grilled tomato and sprinkle a few drops of Worcestershire sauce or Lea Perrins – Serve Hot and thank me later !
