Cabbage Soup with Minced Meat

How to turn a grey day, into a yeah day !
Comforting, rich and ever so satisfying. You can include any vegetables you like.
A wonderful soup which can be put together in minutes. It freezes beautifully and includes enough vegetables to make it into a meal in itself.

INGREDIENTS
500 gr. Minced Beef
1 Large onion chopped roughly
2 Garlic cloves minced finely
1/2 Teaspoon Chilli Flakes
2 Carrots sliced and chopped in small pieces
2 Celery Branches finely sliced and cut in small pieces
3 Cups of Cabbage cut in square
1 Large Can of Chopped tomato
3 Cups water
Salt & Pepper to Taste
3 Tablespoon Olive Oil

METHOD
In a large saucepan, saute the garlic, chili flakes and onions, until the onions start to brown at the edges.
Add the ground meat and cook until brown on all sides.
Add the cabbage, carrot and celery and saute for a minute.
Add the chopped tomatoes and 3 cups of water.
Cook at medium heat, for 30 minutes.
Serve with a piece of bread and a dash of parmesan cheese.

TIP DU JOUR – When making this recipe, double the ingredients and before putting the vegetables split in half. Use the other part to make Chilli Con Carne. Simply add your spices and a can of red beans (pinto or kidney beans)
You can turn it into an Italian-like soup by adding 1/2 Teaspoon Oregano, 1/2 Teaspoon Basil and a few Chilli Flakes. Garnish with grated Parmigiano reggiano.
