


INGREDIENTS
5 Medium size potatoes, peeled and rinsed – or 2 Large Zucchini
1 Medium size white onion
Salt, Pepper, Cayenne Pepper to taste
2 Large tablespoon of all purpose flour
1 Egg at room temperature
3 Tablespoons vegetable oil
METHOD
Grate the potatoes over a dish towel. Once completed squeeze as much liquid as possible from the grated potatoes. This is an important step, as it will make the potatoes crispier and stick together.
Add the grated onion, salt, pepper and cayenne. Add the egg and mix well. Then add the flour and mix well.
In a very hot skillet, add the oil and using a tablespoon, add the equivalent of two tablespoons for each latkes portion.
Saute for a few minutes on both sides, until brow and crispy of both sides.
Serve with smoked salmon and of course, a dollop of sour cream !
TIP DU JOUR – You can also substitute potatoes for Zucchini, equally delicious.
