Chocolate Banana Molten Cake

Underneath the chocolate cake, rest hot bananas. A lovely surprise and a perfect culinary match.
Easy to put together, you can prepare the cake in a few minutes. Banana and Chocolate make such a wonderful combination.

INGREDIENTS

2 Bananas cut in halves
3 Eggs separated
150 Gr. Dark Chocolate
100 Gr. Sugar
100 Gr. Butter at room temperature.
60 Gr. Almond meal
1 Large Tablespoon of all purpose flour
1/4 Teaspoon Salt

METHOD
Preheat the oven at 180 Celsius – Butter a baking dish, one you can bring to the table.
In a large bowl, using a hand whisk, beat the egg yolks and sugar until pale and the sugar has dissolved.
Melt the chocolate and the butter in a Bain-Marie (or in the microwave, at low temperature) and when cool enough to handle, mix in with the eggs preparation.
Add the flour, almond meal and salt and mix well. Add the egg whites lightly beaten with a fork (30 seconds) and mix well.
Cut the bananas in halves and place face-up in a well buttered serving/baking dish and cover with the cake batter.
Bake in a pre-heated 180 Celsius oven for 25 minutes – 30 minutes.
The cake is runny and very much like a Molten Cake
It can also be made with Pears in syrup.
Serve with a dollop of Crème Fraîche or Ice Cream.
