2 tbsp vegetable oil
500g (1 lb) beef mince
2 garlic cloves, finely chopped
1 onion, finely diced
1 Small can of chopped tomatoes
350 Gr. (13 oz) dried rice stick noodles
1 Finely sliced spring onion (scallions), to serve
Chilli flakes, to serve (optional)
3 Tablespoons Oyster Sauce
2 Teaspoon Sambal Oelek or Chinese Garlic Paste
2 Teaspoons Dark Soy Sauce
First, prepare the stir-fry sauce by mixing the oyster sauce, Sambal Oelek and Soy Sauce in a small bowl.
Heat the vegetable oil in a hot wok over high heat.. Add the beef and spread it out in the wok. Leave it to sear for 3-4 minutes or until very dark.
Then mix and break up the beef with your spatula. Now add the garlic and onion and stir-fry for another 2 minutes. Add the tomatoes and simmer for 15 minutes.
While the sauce is cooking, boil some water and cook the rice noodles until al dente. If the sauce is not ready, simply rinse the noodles under cold water to prevent them from cooking further. When the sauce is ready, transfer the noodles in the sauce and mix well.
Garnish with chopped scallions or sesame seeds, chopped parsley or coriander.
