Apple Cake – Gâteau moelleux aux Pommes

Most families in France have a yogurt cake recipe, using the small yogurt container as a measure for all the ingredients. This is a similar cake, as it does not require a mixer and can be prepared in one bowl. The beauty of this cake is that it even gets better after a few days, when all the ingredients marinate and the flavours develop at room temperature. This is the perfect recipe when you have a last minute dessert to prepare, with very few ingredients required.

INGREDIENTS
6 portions
2 Apples peeled, cored and sliced thinly (any type of apple will do)
2 Eggs at room temperature
100 Gr. butter melted ( 1/2 cup )
1 Tablespoon honey
100 Gr. All purpose flour
5 Gr. Baking powder
2 Packets Vanilla sugar or 2 tablespoons sugar with 2 teaspoons Vanilla extract

PREPARATION
Turn on your oven at 180 Celsius; convection setting
Butter and flour a 17cm round pan or like me, use two small cake pans
Simple enough, crack the eggs in the bowl and add the vanilla sugar with the melted butter and using a whisk, mix very well.
Add the liquid honey and the sifted flour with baking powder
Finally, add the apples which you already have peeled and cut in thin slices. Mix well so the apples are well covered.
Pour in your mold and fill to approximately 3/4 so there is a little room to grow.
Bake for 30 minutes, until golden brown.
Dust some icing sugar when cooled and serve at room temperature.
