

INGREDIENTS
1 Large cauliflower cut in small “bouquet”
1/4 Cup of Panko Breadcrum
1/4 Cup of Pecorino / Parmesan Cheese
Bechamel
2 Tablespoon Butter
2 Tablespoon Plain Flour
3 Cups of Milk
Salt – Pepper – Hot Paprika (1/4 teaspoon) – Pinch of Nutmeg using a microplane.
METHOD
In a pressure cooker, place all the cauliflower bouquet and cover with water. Bring to a high level steam and reduce the heath to a minimum and cook for 5 minutes.
I sometime steam them for 10 minutes
Make sure your vegetable are still firm as they will continue to cook in the oven.
BECHAMEL
Whilst the vegetable is cooking, melt the but in a saucepan and as soon as melted, pour in the flour and mix well with a whisk. Cook for about 2 minutes, until the flour is cooked and then pour your milk gradually, using a whisk and mix continuously, to avoid any lumps.
Salt & Pepper & Nutmeg & Paprika
Cook for about 5 minutes
Using Julia Child Method, you can heath the milk to a boiling point and then pour entirely on your butter/flour preparation, whilst mixing continuously. Guaranteed success.
Place all your cauliflower in an oven baking dish and pour the bechamel on them.
Cover the vegetables with the Panko & the grated Cheese.
