Cake aux Olives

INGREDIENTS
250 Gr. Flour (2 cups)
125 Gr. Butter (1/2 cup) melted
4 Large Eggs
10 Gr. Baking Powder
3/4 Cup White Wine – Dry white wine preferably – at room temperature
150 Gr. Grated Gruyere or a cheese of your choice – Old Cheddar works well
12 Olives sliced
8 Slices Italian Salami in small cubes
2 Slices of Ham in small cubes
1/4 Teaspoon Red Chilli Flakes.
1/2 Teaspoon Salt & Pepper to taste


METHOD
Mix the wet ingredients in a large bowl ; the melted butter with the wine, add the eggs, one at a time and mix well in between.

Sift the flour over another bowl with the baking powder and salt.
Pour the liquid over the flour mixture and blend well with a spatula or a whisk.
Add the gruyere, olives, salami, ham and bacon, Pepper & Chilli Flakes
Place in buttered and floured cake pan and bake for 40 minutes in a 180 Degrees Celcius in a pre-heated oven

The breads freeze very well – You can whip up a great cocktail by reheating the cakes in a 150 Degrees Celsius oven for 10-15 minutes.
You can use any type of ham you have – Same with olives; black, green, stuffed with pimentos, etc.. the possibilities are endless
