Pain Aux Epices / Spice Bread

We know Christmas is coming in our home, when we bake these lovely breads, as they become part of our traditions. These breads are very popular in France when the Foie Gras season is in full swing. Easy to prepare, the complexity of flavours make it a wonderful addition to foie gras, any cheese courses or simply toasted with a morning coffee. Pour all the ingredients in a bowl, mix and bake. The combination of sweet, spicy and savoury make them irresistible.

260 Gr. All purpose flour
40 Gr. Moscovado Sugar
10 Gr. Baking Powder
1 Teaspoon Cinnamon
1 Teaspoon Powder Ginger
1 Teaspoon of Star Anis grated
350 Gr. Liquid Honey
1/2 Teaspoon Salt

Sift the flour, baking powder, sugar, salt and spices in a mixing bowl. Make a well in the center and pour all the liquid ingredients; honey, milk and slightly beaten eggs. Using a whisk, mix very slowly and avoiding making lumps.
Bake in a preheated oven at 170 Celsius for 40-50 minutes. The bread is ready when a knife insterted in the middle, comes out clean.
