Giardiniera Croccante – Pickled Vegetables

With ingredients you always at home, you can create this easy and tasty accompaniment to any grilled meat or salads. I can’t get enough of it !

2 Cups of White Vinegar or Apple Vinegar
2 Cups of Water
2 Tablespoon Sugar
2 Bay leaves
1 Tablespoon Coriander
2 Celery branches cut in thin slices
2 Cups of White Cabbage shredded
2 Cups of Onions thinly sliced
1 Small Cauliflower cut in small bouquet
2 Carrots peeled and cut in slices
1 Red pepper seeded and sliced

Place the vinegar, water and spices and bring to a boil. Pour in the vegetables and cook for about 5 minutes.

Remove the vegetables and pour in your containers. Wait until the cooking liquid cools down and pour over the vegetables. I keep them at room temperature for 3 days and then put them in the fridge.
