INGREDIENTS
1.5 Kg. Prok Spare Ribs
1 Teaspoon Salt
1 Teaspoon Five-Spice Asian Mix
For the Sauce:
5 Tablespoons Hoisin Sauce
2 Tablespoons Sesame Oil
2 Tablespoons Light Soy Sauce
2 Tablespoons Dark Soy Sauce
2 Tablespoon Mirin or Shaoxing Rice Wine
2 Large Garlic cloves finely minced
1 – 2 cm Fresh Ginger, peeled and finely chopped
2 Tablespoons Chilli-Bean Sauce
3 Tablespoons Dried Thyme
1 Tablespoon Dijon Mustard
Preheat the oven at 160 Celsius – Put the spare ribs in a baking dish and sprinkle both sides evenly with salt and pepper and the 5 Spice Asian mix.
Cook for 1 hour.
In the meantime, prepare your sauce mixing all ingredients in a bowl.
Remove the ribs after an hour and smear generously over each rack of ribs on both sides.
Put back in the oven and cook for a total of two hours with the lid on. After the first hour, remove the lid and smear more of the sauce over the ribs and put back in the oven for another hour, this time without the lid.
Serve with Jasmine Rice, Asian Coleslaw or Asian Cucumber salad.
