

INGREDIENTS
Serve 4
1 Packet of Pasta of your choice ; Spaghettini, Bucatini work very well
1/4 Cup olive oil
1 1/2 Cups of Panko breadcrumbs – You can also use a day old bread cut in small pieces
1 Large Garlic clove minced
1 Large onion minced
60 Gr. Anchovies in olive oil – chopped
1/4 – 1/2 Teaspoon Chilli flakes – to your taste
Ground pepper
Handful of Italian or Flat leaves parsley
METHOD
Using a very large saucepan, bring water to a boil to cook your pasta. Make sure you salt the water with at least one tablespoon of salt
In a frying pan – pour half the olive oil and when hot, saute the breadcrumbs until they start to brown. Set aside in a bowl.
Using the remaining oil, saute the garlic with the chilli flakes and onion until they start to brown. Add the anchovies and saute for a minute or so. The anchovies will literally melt in the pan.
Drain your pasta and add them to the frying pan. Add the parsley and 3/4 of the breadcrumbs and mix well.
Put the pasta on serving plates and garnish with the remaining breadcrumbs.
