Baked Ginger & Scallion Cod

A delicate and refined dish you can prepare in a few minutes.
A very simple dish, which can be prepared in a few minutes.

INGREDIENTS
Serve 4
4 Fish fillets – Cod, Halibut or Haddock
1 Tablespoon butter at room temperature
Salt & Pepper to Taste
1 Scallion finely sliced in ribbons.

For the Sauce
1 – 3cm piece of Ginger cut in fine slivers
1 Tablespoon Vegetable oil

In a small bowl – mix the following ingredients
1/4 Cup of Soy Sauce
1 Tablespoon Sesame Oil
1 Teaspoon Sriracha Sauce
1 Teaspoon Honey

For the fish – Preheat your oven at 200 Celsius – Using a baking pan covered with parchment paper, place all the fish fillet skin down. Brush a little bit of butter on top of each fish piece and season with salt & pepper.

Cook the fish for 10 minutes

In the meantime, using a small saucepan, heat the vegetable oil until very hot and stir in the ginger. Mix well and cook for a minute, until the ginger start to brown at the edges.
Pour in the soy sauce mixture and mix well.

To assemble the place, place the fish fillet and spread a few sprigs of scallion ribbons and pour 2 tablespoons of the soy sauce mixture. Make sure you include a little ginger.
Serve with Jasmine Rice.
