Yogurt Cake

INGREDIENTS

200 Gr. Sugar (1 Cup)
Zest of one Orange
125 Gr. Plain Yogurt
3 Large Eggs at room temperature
1 Teaspoon Vanilla Extract
180 Gr. All purpose flour
2 Teaspoon Baking powder
1/4 Teaspoon Salt
1/2 Cup Vegetable Oil

For the Syrup
2 Tablespoons Grand Marnier
2 Tablespoons Orange Juice
1 Tablespoon Sugar

PREPARATION
Preheat your oven at 160 Celsius (350 Fahrenheit) and flour an 8 1/2 X 4 1/2 inch loaf pan.

In a large bowl, combine the sugar and orange zest. Using the tip. of your fingers rub them together to distribute the citrus oils.
Pour in the yogurt and eggs and using a whisk, blend everything together so you have a smooth liquid-like paste. Add the oil and Vanilla and whisk to combine until homogenous.
Place a sieve over your bowl and pour in the flour, baking powder and salt. Sift through and use your whisk to give it a final stir.

Place in the oven and bake for 30-35 minutes.

For the syrup, simply heat the Grand Marnier and Orange juice in the microwave until just warm (45 seconds will do) and add the sugar. Mix until the sugar has dissolved. Pour over the cake and dust with powder sugar.

You can vary the liquor according to taste. I sometime use Amaretto liquor with almond essence or substitute the orange for lemon and add Limoncello for a completely different experience.
