
The health benefits of both Turmeric and Black Pepper are numerous. Turmeric for one, is an anti-oxidant, anti-inflamatory, good for arthritis, muscle soreness and kidneys. On the other hand, Black Pepper is rich in potassium which helps regular your heart rate and high blood pressure. It is also a great detoxifier, prevents cancer and helps produce red blood cells. Combining both spices brings a wealth of health benefits and wonderful flavours. Although not considered Asian, this dish could, with the addition of soy sauce, migrate to the Asian category, one I particularly enjoy. The wonderful thing about this recipe lies in its simplicity, ease of preparation and the wonderful flavour combination.
INGREDIENTS
Dinner for two
1 Chicken breast, cut in small pieces
3 Tablespoons Flour
1 1/2 Teaspoon Turmeric
1/2 Teaspoon Salt
1/2 Cup of Water
2 Tablespoons Honey
1 Teaspoon freshly ground pepper
1 Tablespoon of Xeres Vinegar or Soy Sauce
3 Tablespoons olive oil
6 Medium Size Asparagus sticks cut in small pieces diagonally.
PREPARATION
In a small bowl, pour 1/2 cup of water with the Honey and mix well, making sure the honey has melted. Add the freshly ground pepper and mix well. Set aside for the final sauce for this dish.
In another bowl, mix in the flour and turmeric and mix well. Add the chicken pieces and mix well so all the chicken pieces are covered in flour.
In a small pan, pour the olive oil and when hot, add the chicken pieces and cook until the pieces start to brown. Turn them over and cook them until both sides have a golden colour ; about 3-4 minutes.
Add the asparagus and cook, brown them for another 2 minutes. Then, add the water with the black pepper and honey mixture and pour over the chicken and asparagus. Cook at medium heat, until the sauce starts to thicken. At the last minute, add the vinegar or soy sauce and mix well. The sauce should be liquid, yet it should start to thicken a little bit.
Serve over a bed of Jasmine Rice or salad and you have dinner ready in less than half hour.
