My everyday Bread Recipe

I make bread every week and keep it in the freezer, so we can indulge with fresh toasts every morning. Such a treat which requires very little effort with wonderful results.

INGREDIENTS
300 Ml. lukewarm water
10 Gr. active dry yeast
1 Tablespoon Sugar
1 Teaspoon Salt
420 Gr. All purpose flour

PREPARATION
In a medium size bowl, add the dry yeast with the warm water and mix well. Add the the flour and salt and combine well. You may have some small flour lumps, but do not worry, they will disappear when the dough starts to incorporate all the water.
The consistency of the dough should be smooth and sticky. Scrape down the sides of the bowl. Cover the bowl with a tea towel and let is rest for about 40 minutes.
After that time, you will notice the yeast starting to take effect and small bubbles will appear alongside of the bowl.
Using a plastic scraper, or as I do, wet your hands and stretch the dough about 5-6 times, until all sides have been folded. Allow to rest for another 40 minutes, covered with a tea towel.
After the last 40 minutes rest, pour the dough on a floured table and divide it in 2 loaves of equal weight.
(Approx. 375 Gr. each)
Fold over to form a loaf and place each one on a baking tray covered with parchment paper. Cover with a tea towel and rest for another 20 minutes. Using a sharp blade, make a single cut along the bread.
During the last resting time, turn on your oven to 200 Degrees Celsius. Bake for 25-30minutes.
I use the convection setting which allows the air to circulate in the oven.
Insert the bread tray and spray water inside the oven about 5-6 times to create steam in the oven.
Bake until dark brown and oh my…..
Remember you should wait at least 20 minutes before cutting into these marvels !
