The Dressing — Nước Chấm
This is the soul of the dish. A traditional Vietnamese dressing that takes no more than five minutes to whisk together — bright, punchy, and perfectly balanced between sweet, sour, and salty.
INGREDIENTS
3 Tablespoons Fish sauce
3 tablespoons fresh lime juice
2 tablespoons warm water
2 tablespoons rice wine vinegar
1 tablespoon brown sugar
1 tablespoon soy sauce
1 clove garlic, finely minced
1 red bird’s eye chilli, finely sliced
PREPARATION
Combine the brown sugar and warm water in a small bowl or jar, stirring until the sugar has completely dissolved. Add the fish sauce, lime juice, rice wine vinegar and soy sauce, and whisk everything together until well combined. Fold in the minced garlic and sliced chilli.
Taste and adjust — a little more sugar if it feels too tart, a splash more fish sauce if it needs greater depth. Set aside while you prepare the noodles.
The Noodle Salad
INGREDIENTS
200 Gr. Rice noodles
1 large carrot, julienned
1 seedless cucumber, julienned
A generous handful of fresh mint leaves
A generous handful of fresh coriander leaves
PREPARATION
Place the vermicelli noodles in a large bowl and pour over enough boiling water to submerge them completely. Allow the noodles to steep for 4 minutes, then taste for doneness — they should be tender but still have a very slight bite. Drain and rinse briefly under cold water to stop the cooking and keep them from clumping.
Return the noodles to the bowl and add the julienned carrot, cucumber, fresh mint and cilantro. Pour the dressing generously over everything and toss well until every strand is coated and glistening.
Serve immediately, with extra chilli on the side for those who like the heat. 🌿🌶️
