75 Gr. Hazelnut
160 Gr. Butter
160 Gr. Brown Sugar – I use light brown sugar
1 Egg at room temperature
1/4 Teaspoon Salt
250 Gr. All purpose flour
3 Gr. Baking Powder
160 Gr. Chocolate chips – I use dark chocolate 70% cocoa
Preheat your oven at 140 Celsius. Place the hazelnuts on a baking tray covered with parchment paper. Grill the hazelnuts for 10 minutes and let them cool. Place them in a plastic bag and using a rolling pin, crush them in medium size pieces.
In a bowl of a mixer, stir in the butter and brown sugar. Mix for 5 minutes, until the mixture become light and fluffy. Add the egg and mix for another minute. Add the flour, salt and baking powder and mix well. The mixture will be quite solid and that’s what you are looking for.
Pour the mixture on parchment paper and roll it into a 5cm thick cylinder. You can cut them roll into 1 cm piece cookie and spread them on a tray with quite a little bit of distance in between, as the cookies will spread.
Bake at 160 Celsius for 12 minutes, until brown on the edges.
You can also keep the mixture in parchment paper and place in a freezing bag.
Let the cookie dough out of the freezer 10 minutes and cut in 1cm piece you can bake at last minute.
